I love doing a bit of breakfast prep for 2-3 days at a time, so my mornings stay quick but varied. Here are some of my go-to breakfast ideas!

Whisk 8 eggs with ½ cup of cottage cheese, pour into the skillet, top with cheese, and bake at 375°F until the eggs set (15-20 minutes). This dish can last a few days, so it’s a great option if you’re into breakfast prep.
2. Breakfast Sandwiches
For a quick, healthy breakfast on the go, prepare breakfast sandwiches with an egg base from the frittata above. Cut the frittata into portions, store in the fridge, and in the morning, toast an English muffin or bagel, microwave the frittata portion, and assemble your sandwich. Unlike freezing, this method keeps the flavors fresher!
3. Cottage Cheese Cheesecakes
These cheesecakes are a fun and nutritious option for the whole family! Mix 1 ½ cups almond flour with 4 tbsp melted butter and 1 tbsp sugar for a crust (optional) and bake at 350°F for 10 minutes. Blend 2 cups cottage cheese, ½ cup Greek yogurt, ¼ cup maple syrup, 2 eggs, and 1 tsp vanilla extract. Pour into muffin tins, top with berries, and bake until set (20-25 minutes). Enjoy with fresh fruit for a protein-packed breakfast that kids love too.
4. Yogurt Bowls with Granola and Fresh Fruit
Yogurt bowls are a healthy breakfast for kids and adults alike. Use plain yogurt and top it with granola or trail mix along with fresh fruit. I often make homemade granola with oats, nuts, seeds, and dried fruits. For my toddler, I buy yogurt pouches and give him the granola and fruit on the side.

This oven-baked pancake is a hit for busy mornings because there’s no flipping involved! Blend the ingredients, pour into a hot skillet, and bake for 15 minutes. It’s high in protein and pairs perfectly with a side of yogurt or sausage for a complete breakfast.

Smoothies are quick, tasty, and versatile. My go-to is a blend of frozen strawberries, banana, spinach, chia and flax seeds, unsweetened coconut flakes, and whole milk. For a healthy breakfast on the go, prepare smoothie bags with all ingredients pre-measured, freeze, and blend when you’re ready. This is also a great way to sneak in veggies for picky kids!
Breakfast Add-ons for Extra Fuel
Sometimes you need a little extra to keep you going. Here are my favorite breakfast add-ons:
- Peanut Butter Fat Bombs – Combine ¾ cup almond flour, ¾ cup peanut butter, and ¼ cup honey, scoop into balls, and freeze.
- Protein Powder – Add protein powder to smoothies or pancake batter for a protein boost.
- Protein Bars – Perfect as a grab-and-go breakfast option or alongside your smoothie or yogurt bowl. RX Bars and Perfect Bars are my family’s favorites. They both also have mini versions for kids!
- Collagen Powder – Collagen peptides are flavorless and dissolve completely in coffee or smoothies for an easy way to add protein.
- Silken Tofu – Silken tofu is creamy and flavorless when added to smoothies or as a yogurt alternative.
